My Mom's Rhubarb Bread
Baking loaves of this sweet bread brings me back to my kitchen as a child, when my mom would bake almost everyday.
One of my favorites was her Rhubarb bread.
1 1/2 cups of brown sugar
1 egg
2/3 cup canola oil
1 tsp vanilla
1 cup buttermilk
2 1/5 cups of flour
1 tsp salt
1 tsp soda
2 cups of chopped rhubarb
MIx sugar, eggs, oil vanilla and milk together. Add in flour, salt, and the baking soda. Add/fold in chopped rhubarb.
Put in greased loaf pan.
Mix together 1/2cup chopped nuts (either walnuts or pecans work well)
1/2 cup sugar, 1/2 cup butter melted and 1 tsp cinnamon.
Sprinkle this mixture over the top of the loaf and bake for 60 minutes at 350 degrees F.
